The purpose of Seasonal Delights is to introduce you to seasonal items that you can purchase fresh at your grocery store or farmers market. Not every fruit or vegetable is meant to be accessible year-round, and yet, we continue to purchase items shipped from thousands of miles away, out of season, then complain that they just don’t taste right. Well of course they don’t!
Seasonal Delights is a collection of quick (usually), easy (for the most part), and fun (ALWAYS) recipes. Pick up your fresh, organic produce at the market and impress your friends and family with a delicious delight!
THREE BERRY CRISP
2 cups each of three berries (for a total of 6 cups — raspberries, strawberries, blackberries, blueberries — if you want to get creative, try using other fruits, like sliced peaches or apples. Otherwise, frozen mixed berries work well if you’re in a rush. As always, I recommend fresh, organic fruit for optimal taste)
1 cup flour (choose whole wheat or gluten free flour to make it healthier)
2 cups rolled oats (steel-cut provides a thicker, crunchier texture)
1 cup brown sugar
3 tablespoons butter
2 tablespoons olive oil
- Pour the berries into an 8″ or 10″ glass baking pan. Stir them in the pan so that they mix together.
- Mix the flour, oats, brown sugar, butter, and olive oil in a bowl until it becomes a crumbly mixture. It helps to microwave the butter in a glass so that it mixes more easily.
- Pour the mixture over the berries, making sure it sets evenly.
- Bake for 30 minutes in a preheated oven at 375 degrees until the fruit is bubbling and the crisp on top is a golden brown. (It can take longer if you’re using frozen fruit.)
